Cover a baking sheet with foil and grease with nonstick spray.
Delicious beef short ribs basted in a yummy sticky guava sauce.
Ribs
1. Season the meat with salt and pepper. Heat the oil in a pressure cooker and fry the driblets on both sides until golden. Remove from the cooker and set aside.
2. Add the onions, garlic and bay leaves and stir-fry for a minute. Add the stock and water and bring to the boil. Add the meat and seal the lid of the pressure cooker. Cook under pressure for 40 minutes or until the meat is tender.
Basting sauce
3. Cook the guavas and sugar together until thick and syrupy. Remove from the heat and press the guavas through a sieve – the pips will remain behind. Mix the guava pure with the rest of the basting sauce ingredients.
4. Heat the oven to 230 °C. Remove the driblets from the stock and arrange on the prepared baking sheet. Brush well on all sides with the basting sauce. Grill in the oven for 10 minutes.
5, Remove the driblets from the oven, baste again with the sauce and grill for another 10 minutes. Season with extra salt if necessary and serve.
